Picked at 26.1 Brix and hand-harvested in the cool morning hours. The fruit was destemmed and delivered to a stainless steel tank for a long cool fermentation. During fermentation the Cab Franc received gentle punch downs and slow pump-overs until it was pressed off. The wine aged for 20 months in used Bordeaux barrels. Harvest Date: 9/29/2015.
